Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the butter. Stir continuously as it bubbles and foams until it turns golden brown and smells nutty. Remove from heat and let cool for about 10 minutes.
  2. Mix sugars and butter: In a large mixing bowl, combine granulated sugar, brown sugar, and cooled brown butter. Whisk until smooth and slightly glossy, about 2 minutes.
  3. Add egg and flavorings: Beat in the egg, vanilla extract, lemon zest, and lemon juice until fully incorporated and creamy.
  4. Combine dry ingredients: In another bowl, whisk together flour, baking powder, and salt.
  5. Mix dry into wet: Gradually add dry ingredients to wet mixture, stirring gently with a wooden spoon until just combined. Avoid overmixing.
  6. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
