A crowd-pleasing cheesy butternut squash casserole topped with a buttery, crunchy streusel. This dish is rich, savory, and perfect for gatherings, with a creamy custard base and a golden, crumbly topping that steals the show.

Ingredients

Scale
  • 1 large butternut squash (about 3 lbs), peeled, seeded, and cubed into 1-inch pieces (about 6 cups)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup heavy cream
  • 2 large eggs, lightly beaten
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon nutmeg
  • ½ cup all-purpose flour
  • ¼ cup unsalted butter, cold and cubed
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons brown sugar, packed
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Toss cubed butternut squash with olive oil, salt, and pepper. Spread in a single layer and roast for 25-30 minutes, flipping halfway, until tender and lightly caramelized.
  2. While squash roasts, make the streusel: In a medium bowl, combine flour, Parmesan, brown sugar, and salt. Add cold cubed butter. Use a pastry cutter or fingertips to work butter into flour mixture until it resembles coarse crumbs with some pea-sized butter pieces. Stir in pecans if using. Refrigerate until needed.
  3. In a large bowl, whisk together heavy cream, beaten eggs, minced garlic, thyme, and nutmeg. Stir in shredded cheddar and Parmesan.
  4. Lower oven temperature to 375°F (190°C). Grease a 9×13-inch baking dish. Spread roasted squash evenly in dish. Pour custard mixture over squash, gently stirring to combine if needed.
  5. Sprinkle cold streusel evenly over casserole. Do not press down.
  6. Bake for 25-30 minutes, until streusel is golden brown and casserole is bubbly around edges. Let rest for 10 minutes before serving.

Notes

For best results, keep streusel cold until ready to use. If streusel browns too quickly, tent dish with foil for last 10 minutes of baking. Let casserole rest 10 minutes before serving to allow it to set. Can be assembled a day ahead without streusel; add streusel and bake as directed, adding 5-10 minutes to cooking time.
