A stunning holiday charcuterie board featuring rosemary-infused goat cheese trees, an assortment of cheeses, cured meats, and accompaniments. It looks elaborate but comes together in just 20 minutes.

Ingredients

Scale
  • 8 ounces Brie cheese (a wheel)
  • 6 ounces aged sharp white cheddar
  • 6 ounces goat cheese log
  • 4 ounces Manchego
  • 6 ounces prosciutto (thinly sliced)
  • 6 ounces salami (mix of regular and peppered)
  • 4 ounces soppressata (optional)
  • 1 cup mixed olives (green and kalamata, drained)
  • 1/2 cup dried apricots
  • 1/2 cup dried figs (or dates)
  • 1/2 cup Marcona almonds (or regular almonds)
  • 1/4 cup honey
  • 1 small bunch red seedless grapes
  • 1 small jar fig jam or quince paste
  • 8–10 fresh rosemary sprigs (sturdy and bushy)
  • 1 log goat cheese (for rosemary trees)
  • Fresh cranberries or pomegranate seeds (optional, for decorating trees)
  • 1 baguette (sliced into thin rounds and lightly toasted)
  • 1 box good-quality crackers (water crackers or rosemary-infused)
  • Optional: grissini (breadsticks)

Instructions

  1. Start with the rosemary trees: Cut the goat cheese log into 4 equal pieces. Roll each piece into a cone shape. Trim rosemary sprigs to about 3 inches long. Starting from the bottom of the goat cheese cone, press the rosemary sprigs into the cheese, working upward in layers. Optionally press cranberries or pomegranate seeds between layers. Set aside.
  2. Prepare the cheeses: Take brie out of fridge 20 minutes before serving. Place whole wheel on board. Cut cheddar into thin slices or cubes and arrange in a fan pattern. Slice manchego into thin triangles.
  3. Arrange the meats: Fold prosciutto slices in half twice to create ribbons. Fold salami slices in half and then again to form triangles. Roll soppressata slices into cylinders. Place in clusters on board.
  4. Add the accompaniments: Spoon olives into a small bowl and place on board. Do the same with fig jam and honey. Scatter dried apricots, figs, and almonds around board. Place grapes in a cluster.
  5. Place the rosemary trees: Transfer finished trees to board, positioning them as a focal point. Press bottoms gently into cheese or a cracker for stability if needed.
  6. Add the bread and crackers: Fan out toasted baguette slices along one edge. Arrange crackers in a separate cluster. Add grissini if using.
  7. Final touches: Fill any gaps with extra grapes, nuts, or fresh rosemary sprigs. Ensure board looks abundant but not overcrowded.

Notes

For best results, let cheeses come to room temperature (about 30 minutes) before serving. Assemble board about an hour before guests arrive. If making ahead, assemble everything except bread and crackers; cover loosely with plastic wrap and refrigerate. Add bread and crackers just before serving. The rosemary trees can be made up to 24 hours in advance and stored in an airtight container in the fridge.
