  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 7 oz (200g) white chocolate chips or chopped white chocolate
  • 1 teaspoon coconut oil or vegetable oil (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin pan with paper liners.
  2. In a medium bowl, whisk together the melted butter and sugar until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  3. Sift the cocoa powder, flour, and salt into the wet mixture to avoid lumps. Fold gently using a rubber spatula until just combined.
  4. Spoon the batter evenly into the prepared mini muffin pan, filling each cup about 3/4 full.
  5. Bake for 12-14 minutes until edges look set but centers are slightly soft. A toothpick inserted should come out with moist crumbs, not wet batter.
  6. Let the brownie bites cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before dipping.
  7. Melt the white chocolate chips and coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each until smooth, or use a double boiler.
  8. Using a toothpick or fork, dip each brownie bite halfway into the melted white chocolate. Let excess drip off and place back on the wire rack or parchment paper.
  9. Allow the chocolate coating to harden at room temperature or chill in the fridge for 15-20 minutes. Store in an airtight container once set.

Notes

Cool brownie bites completely before dipping to prevent melting the chocolate coating. Use low heat when melting white chocolate to avoid burning. If white chocolate thickens during dipping, warm gently again. For even coating, dip halfway and tap off excess chocolate gently. Overbaking dries brownies out; bake until edges are set but centers remain soft.
