  • 1/2 cup salted peanuts
  • 1/4 cup Halloween sprinkles
  • 1/4 cup mini pretzel twists, broken into pieces

Instructions

  1. Pop the popcorn: In a large pot, heat the coconut oil over medium-high heat. Add 3 popcorn kernels and wait for them to pop. Once they do, add the rest of the kernels, cover with the lid, and shake the pot gently. Keep shaking every few seconds until the popping slows to about 2 seconds between pops. Remove from heat and let it sit for 30 seconds. Pour the popped popcorn into a large mixing bowl, removing any unpopped kernels.
  2. Season the popcorn: Sprinkle the salt over the warm popcorn and toss gently. Set aside.
  3. Melt the almond bark: Break the almond bark into pieces and place in a microwave-safe bowl. Add the coconut oil. Microwave in 30-second intervals, stirring after each, until completely smooth (about 90 seconds total). Stir in the vanilla extract.
  4. Combine everything: Pour the melted almond bark over the popcorn. Use a spatula to gently fold and toss until every kernel is coated.
  5. Add the mix-ins: While the coating is still wet, sprinkle in the candy corn, peanuts, pretzel pieces, and Halloween sprinkles. Fold gently to distribute evenly.
  6. Spread to set: Pour the mixture onto a baking sheet lined with parchment paper. Spread into an even layer. Let it cool at room temperature for about 30 minutes, or until the coating is completely set. For faster setting, refrigerate for 15 minutes.
  7. Break into pieces: Once set, break the popcorn mix into bite-sized clusters. Store in an airtight container.

Notes

For extra crispy popcorn, toast freshly popped popcorn in a 300°F oven for 5 minutes before coating. Let the coating cool for about a minute before adding candy corn to prevent melting. Store in an airtight container at room temperature for up to 5 days. For a vegan version, use dairy-free white chocolate chips and coconut oil, and ensure candy corn is vegan.
