Ingredients

Scale
  • 1 (2-3 lb) boneless, skin-on turkey breast (about 900g-1.4kg)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • 1 cup fresh or frozen cranberries (about 100g)
  • ½ cup orange juice
  • ¼ cup honey
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon orange zest (from about 1 large orange)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch of ground cloves (optional)
  • ½ cup low-sodium chicken broth
  • 1 tablespoon butter, cold and cut into small pieces
  • 1 tablespoon all-purpose flour (or cornstarch for gluten-free)

Instructions

  1. Preheat oven to 375°F (190°C). Let turkey breast sit at room temperature for 15 minutes. Pat completely dry with paper towels. Season all sides with salt, pepper, and garlic powder.
  2. In a small saucepan, combine cranberries, orange juice, honey, brown sugar, and orange zest. Bring to a simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until cranberries pop and mixture thickens slightly. Remove from heat and stir in vanilla extract, cinnamon, and cloves (if using). Let cool for 5 minutes.
  3. Place seasoned turkey breast in a roasting pan, skin side up. Brush a generous layer of glaze all over the top and sides. Reserve remaining glaze.
  4. Roast for 25 minutes. Remove from oven and brush on another layer of glaze. Return to oven and roast for another 20-30 minutes.
  5. After about 45 minutes total roasting time, start checking internal temperature with a meat thermometer. Insert into thickest part of breast, avoiding bone. When it reaches 155°F (68°C), brush on final layer of glaze and roast for 5 more minutes.
  6. Remove turkey from oven and transfer to a cutting board. Tent loosely with aluminum foil and let rest for at least 15 minutes.
  7. While turkey rests, pour pan drippings into a small saucepan. Whisk in flour and cook for 1 minute. Slowly whisk in chicken broth and bring to a simmer. Cook for 3-4 minutes until thickened. Whisk in cold butter for a glossy finish. Season with salt and pepper to taste.
  8. Slice turkey breast against the grain into ½-inch thick slices. Arrange on a platter and drizzle with any remaining glaze or pan sauce. Serve immediately.

Notes

For best results, pat turkey dry before seasoning to ensure glaze sticks. Use a meat thermometer and pull turkey at 155°F; carryover cooking will bring it to 165°F. Let turkey rest for at least 15 minutes to keep juices in the meat. If glaze starts to burn on edges of pan, add a little chicken broth to loosen it up and scrape it into the pan sauce for extra flavor.
