Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the fresh lime juice, olive oil, minced garlic, minced habanero, cumin, smoked paprika, salt, pepper, and honey. Give it a good taste—it should be spicy, tangy, and slightly sweet. Adjust the heat to your preference by adding more or less habanero.
  2. Marinate the Chicken: Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over them, making sure each piece is well coated. Seal the bag, removing as much air as possible, and massage the marinade into the chicken. Refrigerate for at least 30 minutes, but 2 hours is ideal. Don’t go over 4 hours, or the lime juice will start to ‘cook’ the chicken and make it mushy.
