Ingredients

Scale
  • 4 bone-in, skin-on turkey thighs (about 3–4 pounds total)
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons white miso paste
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon honey
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • ½ teaspoon smoked paprika
  • 1 cup chicken or turkey broth, low-sodium
  • 1 small onion, quartered (optional)
  • 2 sprigs fresh rosemary (or thyme, optional)

Instructions

  1. Dry brine the turkey thighs: Pat turkey thighs dry with paper towels. Sprinkle kosher salt and black pepper evenly over all sides. Place on a wire rack over a baking sheet and refrigerate, uncovered, for at least 4 hours, up to 24 hours.
  2. Make the miso butter: In a small bowl, combine softened butter, white miso paste, minced garlic, soy sauce, honey, thyme, and smoked paprika. Mash with a fork until smooth. Can be made up to 3 days ahead and refrigerated; bring to room temperature before using.
  3. Preheat the oven to 400°F (200°C) about 30 minutes before cooking. Position a rack in the middle.
  4. Prep the pan: Pour chicken broth into a 12-inch cast iron skillet or roasting pan. Add quartered onion and rosemary sprigs if using.
  5. Apply the miso butter: Remove turkey thighs from refrigerator. Using your hands, rub the miso butter all over each thigh, getting under the skin where possible.
  6. Arrange and roast: Place turkey thighs skin-side up in the skillet, leaving space between each. Roast for 35-40 minutes until skin is deeply golden and crispy.
  7. Check the temperature: Insert a meat thermometer into the thickest part of a thigh, avoiding the bone. Target temperature is 175-180°F.
  8. Rest and serve: Transfer turkey thighs to a cutting board and tent loosely with foil. Let rest for 10-15 minutes. Spoon pan drippings over the top before serving.

Notes

Don’t skip the dry brine—it ensures juicy meat and crispy skin. Let miso butter come to room temperature for easy spreading. Use a meat thermometer for perfect doneness. Let turkey rest before cutting to retain juices. For extra crispy skin, broil for 2-3 minutes at the end, watching carefully.
