A rich and comforting one-pan meal featuring bone-in pork chops smothered in a creamy garlic mushroom gravy. Perfect for weeknights yet impressive enough for guests.

Ingredients

Scale
  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 8 ounces cremini or white button mushrooms, sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. Let sit at room temperature for 10 minutes.
  2. Heat olive oil in a large heavy-bottomed skillet over medium-high heat until shimmering. Add butter and let melt. Sear pork chops for 4-5 minutes per side until golden brown and crusty (internal temperature about 135°F). Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add sliced mushrooms with a pinch of salt. Cook, stirring occasionally, until they release moisture and brown, about 5-6 minutes.
  4. Add diced onion to the mushrooms and cook for 2 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the mushroom mixture. Stir constantly for 1 minute until incorporated and slightly nutty.
  6. Slowly pour in chicken broth while stirring vigorously, scraping up browned bits. Bring to a simmer and let thicken slightly, about 2 minutes. Stir in heavy cream, dried thyme, and Dijon mustard. Whisk until smooth.
  7. Return pork chops to the skillet, nestling into the gravy. Spoon some gravy over the tops. Reduce heat to low, cover, and simmer for 15-20 minutes until internal temperature reaches 145°F.
  8. Remove from heat and let rest in gravy for 5 minutes. Sprinkle with fresh parsley and serve hot.

Notes

Don’t rush the sear; let the chops develop a deep golden crust. Watch heat when adding cream to prevent curdling. Season in layers. For thinner chops, reduce simmering time. Double the gravy ingredients if desired.
