Cajun Grilled Shrimp Foil Packets

A quick and flavorful grilled shrimp recipe with Cajun seasoning and fresh veggies cooked in foil packets for an easy, healthy meal.

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1 cup zucchini, sliced into half-moons
  • 1 cup cherry tomatoes
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley or cilantro
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine shrimp, olive oil, Cajun seasoning, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Toss well to coat.
  2. In another bowl, mix sliced bell peppers, onion, zucchini, and cherry tomatoes with a pinch of salt and a drizzle of olive oil.
  3. Tear off four large sheets of heavy-duty aluminum foil, about 12×12 inches each.
  4. Divide the veggies evenly among the foil sheets, placing them in the center.
  5. Top each pile of veggies with an even portion of the seasoned shrimp.
  6. Drizzle lemon juice over each packet.
  7. Fold the foil over the shrimp and veggies, sealing the edges tightly to create packets without holes.
  8. Preheat grill to medium-high heat (about 400°F/200°C).
  9. Grill the foil packets for 5-6 minutes per side, about 10-12 minutes total, until shrimp are opaque and pink and veggies are tender but crisp.
  10. Carefully open packets (watch for steam), sprinkle with fresh parsley or cilantro, and serve.

Notes

Use two layers of heavy-duty foil to prevent leaks. If grill flares up, use indirect heat or place packets on cooler side. Frozen shrimp can be used but add extra grilling time. Foil packets can be assembled ahead and refrigerated up to 6 hours before cooking. For oven cooking, bake at 400°F for 15-18 minutes.
