  • 1 ½ teaspoons pure vanilla extract
  • 2 tablespoons espresso powder dissolved in 2 tablespoons hot water
  • 1 ½ cups semi-sweet chocolate chips (270g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. Dissolve 2 tablespoons of espresso powder in 2 tablespoons of hot water and let it cool slightly.
  4. In a separate bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  5. Beat in the eggs one at a time, then stir in the vanilla extract and the cooled espresso mixture.
  6. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined.
  7. Using a spatula, gently fold in the chocolate chips evenly.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  9. Bake for 10-12 minutes until edges are set and lightly golden but centers look slightly underbaked.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
