  • 8 oz (225g) cream cheese, softened to room temperature
  • 1 medium cucumber, peeled and thinly sliced
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt, plus extra for salting cucumber slices
  • Pinch of freshly ground black pepper
  • 1 tablespoon butter, softened (optional)

Instructions

  1. Peel the cucumber and slice into very thin rounds (about 1/16 inch or 1.5 mm thick). Use a mandoline slicer if available for uniform slices.
  2. Lay cucumber slices on paper towels, sprinkle lightly with salt, and let sit for 10 minutes to draw out moisture. Blot off any excess liquid with fresh paper towels.
  3. In a mixing bowl, combine softened cream cheese, fresh dill, lemon juice, 1/2 teaspoon salt, and a pinch of black pepper. Whip with a hand mixer or wooden spoon until light and fluffy, about 2-3 minutes.
  4. Remove crusts from bread slices carefully. Spread a thin layer of softened butter on each slice if using (optional).
  5. Spread a generous layer of the cream cheese mixture evenly over each slice of bread.
  6. Arrange cucumber slices in a single overlapping layer on half the slices.
  7. Top with the remaining bread slices, cream cheese side down, to form sandwiches.
  8. Using a sharp serrated knife or sandwich cutter, trim sandwiches into neat rectangles or triangles about 2 inches (5 cm) in size.
  9. Arrange on a serving platter, cover with a damp cloth, and refrigerate until ready to serve (up to 2 hours).

Notes

Salting and draining the cucumber slices is essential to prevent soggy sandwiches. Whip the cream cheese until fluffy for a smooth spread. Prepare sandwiches no more than 2 hours ahead and keep refrigerated. Optional butter layer on bread helps prevent sogginess.
