A quick and easy fall cocktail combining crisp apple cider with bubbly prosecco, finished with a warm cinnamon sugar rim. Perfect for brunch, gatherings, or cozy evenings.

Ingredients

Scale
  • 4 oz apple cider, chilled
  • 4 oz prosecco or champagne, chilled
  • 1 oz apple brandy or bourbon (optional)
  • Ice (optional)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • Lemon or apple slice (for rimming)
  • Cinnamon sticks (for garnish)
  • Apple slices (for garnish)
  • Star anise (for garnish)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Mix until evenly combined.
  2. Pour 1 tablespoon honey or maple syrup into another small shallow dish.
  3. Dip the rim of a champagne flute into the honey, rotating gently to coat about 1/4 inch of the rim. Let excess drip off.
  4. Dip the honey-coated rim into the cinnamon sugar mixture, rotating to ensure even coverage. Tap gently to remove loose sugar. Repeat for all glasses.
  5. Ensure apple cider and prosecco are well-chilled.
  6. Pour 4 ounces chilled apple cider into each prepared glass. If using, add 1 ounce apple brandy or bourbon. Stir gently.
  7. Slowly pour 4 ounces chilled prosecco or champagne into each glass, pouring down the side to preserve bubbles.
  8. Garnish with a cinnamon stick, thin apple slice, or star anise. Serve immediately.

Notes

For best results, use fresh unfiltered apple cider. Let the honey set for about 30 seconds before dipping in sugar to prevent sliding. Rims can be prepped up to an hour ahead. For a non-alcoholic version, substitute prosecco with sparkling apple cider or ginger ale.
