Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), peeled, cored, and sliced 1/4-inch thick (mix of Granny Smith and Honeycrisp recommended)
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 10 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Brown the butter: Cut the 10 tablespoons of butter into chunks and place them in a light-colored saucepan over medium heat. Stir constantly with a wooden spoon or silicone spatula. The butter will melt, then foam, then start to crackle and pop. After about 3-4 minutes, the foam will subside and you’ll see golden brown specks forming at the bottom of the pan. The butter will smell nutty. As soon as it turns a deep amber color (like the color of a hazelnut), remove it from the heat immediately. Po…
  3. Prepare the apple filling: In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Toss everything together until the apples are evenly coated. Set aside.
  4. Make the oat crumble topping: In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour the slightly cooled brown butter over the dry ingredients. Stir with a fork until the mixture looks crumbly and all the dry bits are moistened. It should clump together when squeezed in your fist. If too dry, add a tablespoon of melted regular butter; if too wet, add a tablespoon more flour.
  5. Assemble the crisp: Pour the apple mixture into a greased 9×13-inch baking dish and spread it into an even layer. Sprinkle the oat crumble topping evenly over the apples—do not press it down.
  6. Bake: Place the dish on a baking sheet to catch any overflow. Bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping is browning too quickly after 30 minutes, tent the dish loosely with foil for the remaining time.
  7. Cool and serve: Let the crisp cool on a wire rack for at least 15-20 minutes before serving. This allows the juices to thicken. Serve warm.

Notes

Don’t skip browning the butter—it adds a nutty, caramel-like depth. Mix apple varieties for best flavor (Granny Smith and Honeycrisp recommended). Let the crisp rest before serving to allow the filling to thicken. For extra crunch, toast the oats first at 350°F for 5-7 minutes. Store leftovers in the refrigerator for up to 5 days; reheat in the oven or microwave.
