Ingredients

Scale
  • 8 large cinnamon rolls (store-bought refrigerated dough or homemade)
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1/2 cup (120 ml) heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup (50 g) granulated sugar
  • 1/2 teaspoon salt
  • Powdered Sugar Glaze:
  • 1 cup (120 g) powdered sugar
  • 23 tablespoons (3045 ml) milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Slice each cinnamon roll into quarters and place evenly in a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together eggs, milk, heavy cream, vanilla extract, cinnamon, nutmeg, sugar, and salt until smooth and frothy.
  3. Pour the custard mixture evenly over the cinnamon roll pieces, pressing gently to ensure all pieces soak up the custard. Cover tightly with plastic wrap or foil.
  4. Refrigerate the dish for at least 6 hours or overnight to allow the cinnamon rolls to absorb the custard.
  5. Remove the dish from the fridge and let it sit at room temperature for 15 minutes while preheating the oven to 350°F (175°C).
  6. Bake uncovered for 45-50 minutes until the top is golden brown and the custard is set but slightly jiggly in the center.
  7. While baking, whisk together powdered sugar, milk or cream, and vanilla extract in a small bowl until smooth and pourable.
  8. Remove the bake from the oven and drizzle the glaze generously over the warm French toast bake. Let it sit for 5 minutes before serving.

Notes

Do not skip the overnight soak for best texture. Let the bake rest at room temperature before baking to ensure even cooking. Avoid overbaking to keep the center custardy. Use good-quality vanilla extract and fresh cinnamon for best flavor. Leftovers can be refrigerated for up to 3 days and reheated in the oven.
