Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes (San Marzano recommended)
  • 4 cups low-sodium beef broth (chicken broth works)
  • 1 tablespoon tomato paste
  • ½ cup heavy cream
  • Salt and black pepper to taste
  • 8 ounces lasagna noodles, broken into 1–2 inch pieces
  • 1 cup whole milk ricotta
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon zest
  • Pinch of salt and black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned and no longer pink (6-8 minutes). Leave about 1 tablespoon of fat in the pot. Transfer beef to a plate and set aside.
  2. Sauté aromatics: In the same pot, add diced onion and cook 4-5 minutes until softened. Add minced garlic, oregano, basil, and red pepper flakes (if using). Cook 1 minute until fragrant.
  3. Build the broth: Stir in tomato paste and cook 1 minute. Add crushed tomatoes and beef broth. Bring to a boil, then reduce to a gentle simmer.
  4. Cook the pasta: Add broken lasagna noodles to the simmering broth. Cook 10-12 minutes, stirring occasionally, until tender but al dente.
  5. Add cream and beef: Return browned beef to the pot. Stir in heavy cream and simmer 2-3 minutes. Season with salt and pepper to taste.
  6. Make ricotta dollop: In a small bowl, combine ricotta, Parmesan, parsley, lemon zest, and a pinch of salt and pepper. Stir until smooth.
  7. Finish and serve: Ladle soup into bowls. Top with a dollop of ricotta mixture, sprinkle with mozzarella, and garnish with fresh basil. Serve immediately.

Notes

For meal prep, store pasta and broth separately to prevent noodles from becoming mushy. Keep the ricotta dollop cold until serving for the best temperature contrast. If freezing, freeze the broth and meat mixture without the pasta; cook fresh pasta when reheating.
