  • 15 oz (425 g) can whole kernel corn, drained
  • 14.75 oz (418 g) can creamed corn
  • 1 cup (240 ml) sour cream (full-fat or low-fat)
  • 2 large eggs, room temperature
  • 1/4 cup (56 g) unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • Pinch of black pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch (23×23 cm) baking dish thoroughly with butter or non-stick spray.
  3. In a large mixing bowl, whisk together the eggs and sour cream until smooth and creamy, about 1-2 minutes.
  4. Add the melted butter, granulated sugar, salt, and black pepper to the egg mixture and stir gently to combine.
  5. Fold in the Jiffy corn muffin mix gently with a rubber spatula until just combined.
  6. Carefully fold in the whole kernel corn and creamed corn until evenly distributed.
  7. Pour the batter into the prepared baking dish and smooth the top evenly.
  8. Bake for 45-50 minutes, or until the casserole is golden brown on top and a toothpick inserted into the center comes out mostly clean.
  9. Remove from oven and let cool for about 10 minutes before serving.

Notes

Do not overmix the batter to keep the casserole tender. Use room temperature eggs for better texture. Drain whole kernel corn well to avoid excess moisture. Tent with foil if edges brown too quickly.
