  • 1 (2 to 2.5 lb) bone-in, skin-on turkey breast
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 small onion, quartered
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast completely dry with paper towels.
  3. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, salt, pepper, and paprika. Mash together with a fork until well combined.
  4. Gently slide your fingers under the skin of the turkey breast to create a pocket, being careful not to tear the skin.
  5. Take about two-thirds of the herb butter and push it under the loosened skin, spreading evenly. Spread the remaining butter all over the outside of the skin.
  6. Sprinkle a tiny bit of extra salt and pepper over the buttered skin.
  7. Place the quartered onion in the center of your roasting pan. Set the turkey breast on top of the onion pieces. Pour the chicken broth into the pan around the turkey.
  8. Roast for 45 to 55 minutes, starting to check the internal temperature at the 40-minute mark. Target 160°F (71°C) in the thickest part of the breast.
  9. If the skin gets too dark before the meat is done, loosely tent with foil.
  10. Remove from oven and transfer turkey to a cutting board. Let rest for at least 10 to 15 minutes before slicing.
  11. Optional: While turkey rests, strain pan drippings into a small saucepan, skim fat, warm over medium heat, and whisk in 1 tablespoon butter and a squeeze of lemon juice for a quick pan sauce.
  12. Carve the breast against the grain into thick slices. Serve with pan sauce.

Notes

Pat the turkey completely dry for crispy skin. Let the turkey rest at room temperature for 20 minutes before roasting for even cooking. Don’t open the oven door frequently. The herb butter can be made up to 3 days ahead. For a dairy-free version, substitute with vegan butter or olive oil mixed with Dijon mustard.
