  • 6 medium Honeycrisp apples (about 2.5 pounds), unpeeled, cored, and sliced into ¼-inch thick pieces
  • ¼ cup granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • ⅛ teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Prepare the apples: Wash the apples well, core them, then slice into ¼-inch thick pieces. You should end up with about 6 cups of sliced apples. Transfer them to a large mixing bowl.
  3. Make the filling: Add the granulated sugar, brown sugar, lemon juice, cinnamon, cardamom, salt, and cornstarch to the bowl with the apples. Toss everything together with a rubber spatula until every slice is coated. Let it sit while you make the topping.
  4. Make the oat crumble: In a medium bowl, whisk together the oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces remaining. Don’t overwork it.
  5. Assemble the crisp: Pour the apple mixture into a 9×13-inch baking dish and spread it into an even layer. Sprinkle the oat crumble evenly over the top. Don’t press it down.
  6. Bake: Place the dish on a baking sheet to catch any bubbling juices. Bake for 40 to 45 minutes, until the filling is bubbling around the edges and the topping is deep golden brown. If the topping is browning too quickly after 30 minutes, tent loosely with foil for the remaining time.
  7. Cool slightly before serving: Let the crisp rest for at least 10 minutes after it comes out of the oven.
  8. Serve warm: Spoon into bowls and top with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

For best results, keep the butter cold and don’t overwork the crumble. Let the crisp rest after baking to allow the filling to set. The crisp tastes even better the next day.
