  • 1 cup diced tomatoes, seeded
  • 23 sliced jalapeños (optional)
  • 1 cup steamed broccoli florets
  • 2 tbsp chopped fresh chives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Poke each potato 6-8 times with a fork or skewer to let steam escape during baking.
  3. Rub each potato with olive oil and sprinkle with coarse sea salt.
  4. Place potatoes directly on the oven rack or on a baking sheet lined with foil.
  5. Bake for 45-60 minutes, depending on size, until a skewer slides in easily and skins are crispy.
  6. While the potatoes bake, prep your toppings by chopping veggies, crisping bacon, shredding cheeses, and setting everything out in bowls.
  7. Once baked, let potatoes cool for 5 minutes. Slice each potato lengthwise about halfway through and gently press the ends to fluff the inside.
  8. Scoop out some of the fluffy potato into a bowl, leaving a sturdy shell for holding toppings.
  9. Mix the scooped potato with cream cheese and cottage cheese for extra creaminess, then spoon it back into the skins.
  10. Top each potato with your favorite toppings starting with cheese to melt slightly, then add bacon, veggies, sour cream, and fresh herbs.
