Ingredients

  • Unsalted butter, ½ cup (1 stick / 113g)
  • Granulated sugar, 1 cup (200g)
  • Large eggs, 2
  • Vanilla extract, 1 teaspoon
  • All-purpose flour, ⅔ cup (85g)
  • Unsweetened cocoa powder, ⅓ cup (30g)
  • Salt, ¼ teaspoon
  • Baking powder, ¼ teaspoon
  • Pecan halves, 1½ cups (170g)
  • Pure maple syrup, ½ cup (160ml)
  • Bourbon, 2 tablespoons (30ml)
  • Light brown sugar, ¼ cup (50g), packed
  • Unsalted butter, 2 tablespoons (28g), melted
  • Salt, a generous pinch
  • Flaky sea salt (optional, for finishing)
  • Chocolate chips, ¼ cup (45g) (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. In a medium microwave-safe bowl, melt ½ cup unsalted butter. Let cool slightly. Add 1 cup granulated sugar and whisk until combined.
  3. Add 2 eggs one at a time, whisking vigorously after each. Stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together ⅔ cup flour, ⅓ cup cocoa powder, ¼ teaspoon salt, and ¼ teaspoon baking powder. Fold dry ingredients into wet mixture until just combined. Fold in chocolate chips if using.
  5. In a small bowl, combine ½ cup maple syrup, 2 tablespoons bourbon, ¼ cup packed light brown sugar, and 2 tablespoons melted unsalted butter. Whisk until sugar dissolves. Stir in 1½ cups chopped pecans and a generous pinch of salt.
  6. Pour brownie batter into prepared pan and spread evenly. Spoon pecan topping over batter in an even layer.
  7. Bake for 30-35 minutes, rotating halfway through. Brownies are done when edges are set, center is puffed and slightly jiggly, and a toothpick inserted into center comes out with moist crumbs.
  8. Place pan on a cooling rack. Sprinkle flaky sea salt on top if desired. Cool in pan for 30 minutes, then lift out using parchment handles and cool completely before cutting into 16 squares.

Notes

Toast pecans before using for best flavor. Let brownies cool completely before cutting to avoid crumbling. Flavors improve on day two. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
