Ingredients

Scale
  • 1 ½ cups (188g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup (180ml) buttermilk
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 3 ½ cups (420g) powdered sugar, sifted
  • 1 tablespoon vanilla extract (for frosting)
  • 2–3 tablespoons heavy cream
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt (for frosting)
  • Black gel food coloring
  • 24–30 candy eyes
  • Black decorating gel (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides halfway through.
  4. Beat in eggs one at a time, mixing well after each. Add vanilla extract and mix until combined.
  5. With mixer on low, add dry ingredients in three additions, alternating with buttermilk. Start and end with dry ingredients. Mix just until combined; do not overmix.
  6. Divide batter evenly among liners, filling each about two-thirds full. Tap pan gently to release air bubbles.
  7. Bake 18-20 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Cool in pan 5 minutes, then transfer to a wire rack to cool completely.
  8. For frosting: Beat softened butter on medium speed until smooth and creamy, about 2 minutes. Gradually add sifted powdered sugar, 1 cup at a time, beating on low after each addition.
  9. Add vanilla extract, cornstarch, and salt. Beat on medium speed for 2 minutes. Add heavy cream 1 tablespoon at a time until frosting is smooth and pipeable.
  10. Add black gel food coloring a little at a time until desired shade is reached. Beat on low until evenly colored.
  11. Fit a piping bag with a large round tip and fill with black buttercream. Pipe a generous swirl onto each cooled cupcake.
  12. Press a candy eye gently into the center of each swirl. Use black decorating gel to add spooky details like eyebrows or fangs if desired.

Notes

For best results, use room temperature ingredients. The cornstarch in the frosting helps it hold its shape. Cupcakes taste even better the next day. Store unfrosted cupcakes up to 2 days at room temperature; frost and decorate before serving. For dairy-free, use vegan butter and almond milk with lemon juice. For gluten-free, use a 1:1 gluten-free flour blend.
