  • 4 cups (960ml) whole milk
  • ½ cup (100g) granulated sugar
  • 1½ teaspoons ground cinnamon
  • ⅓ cup (50g) raisins
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • 1 tablespoon butter (optional)

Instructions

  1. Rinse the rice under cool water until the water runs clear to remove excess starch. (5 minutes)
  2. In a medium heavy-bottomed saucepan, combine the rinsed rice and whole milk. Bring to a gentle simmer over medium heat. (7-10 minutes)
  3. Stir in sugar, ground cinnamon, and a pinch of salt. Lower heat to maintain a slow simmer and stir frequently to prevent sticking. Simmer for 25-30 minutes.
  4. About 10 minutes before the pudding finishes cooking, add the raisins and continue simmering.
  5. Check the texture after about 30 minutes; the rice should be tender and the mixture thickened but creamy. Adjust thickness by adding milk or cooking longer as needed.
  6. Remove from heat and stir in vanilla extract and butter, if using, for added richness.
  7. Serve warm or chill in the refrigerator for 2-3 hours for a firmer texture. Optionally, sprinkle extra cinnamon on top before serving.

Notes

Use a heavy-bottomed pan to prevent scorching. Stir frequently but gently to keep pudding silky. Rinsing rice removes excess starch and prevents gluey texture. Adjust sugar to taste. For vegan version, substitute milk and butter with plant-based alternatives and use maple syrup or agave instead of sugar.
