This pecan pie cobbler delivers all the rich, gooey flavor of classic pecan pie without the fuss of a crust. Topped with a golden, tender cobbler topping and served warm with vanilla ice cream, it’s the ultimate comfort dessert for any occasion.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract, divided
  • 1 1/2 cups pecans, chopped
  • 1 cup light corn syrup
  • 2 large eggs, room temperature
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the center position. Melt 1/2 cup of unsalted butter and set it aside to cool slightly.
  2. Make the cobbler topping: In a large mixing bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Pour in 3/4 cup milk, 1 teaspoon vanilla extract, and the melted butter. Stir until just combined — a few lumps are fine. Do not overmix.
  3. Prepare the pecan filling: In a separate medium bowl, whisk together 1 cup packed light brown sugar, 1 cup light corn syrup, 2 large eggs, and 1 teaspoon vanilla extract until smooth and well combined. Fold in 1 1/2 cups of chopped pecans until every piece is coated.
  4. Assemble the cobbler: Pour the pecan filling into an ungreased 9×13 baking dish and spread evenly. Drop spoonfuls of the cobbler topping over the filling in dollops — do not spread it out.
  5. Bake for 35 to 40 minutes, until the topping is golden brown and a toothpick inserted into the topping comes out clean. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  6. Cool for 10 minutes on a cooling rack. This allows the filling to set properly.
  7. Serve warm with a generous scoop of vanilla ice cream.

Notes

Toast pecans at 350°F for 5 minutes before adding for deeper flavor. Use room temperature eggs to prevent the filling from becoming grainy. Do not overmix the topping. Let the cobbler rest for 10 minutes before serving to allow the filling to set. For a chocolate variation, add 1/2 cup semi-sweet chocolate chips to the filling. For a bourbon maple twist, replace corn syrup with 3/4 cup maple syrup and add 2 tablespoons bourbon.
