A velvety pink hot chocolate made with white chocolate, beet powder, and topped with marshmallow hearts. This cozy drink is perfect for Valentine’s Day, Galentine’s gatherings, or any chilly evening.

Ingredients

Scale
  • 1 cup (175g) white chocolate chips or chopped white chocolate
  • 2 cups (480ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon vanilla bean paste
  • 1 to 2 teaspoons beet powder
  • Pinch of flaky sea salt
  • Marshmallow hearts for garnish
  • Optional: pink sanding sugar, edible glitter, or grated white chocolate for garnish

Instructions

  1. In a medium saucepan over medium-low heat, combine the whole milk and heavy cream. Heat until warm (about 160°F/71°C), looking for tiny bubbles around the edges, about 4 to 5 minutes.
  2. Whisk in the vanilla bean paste and a tiny pinch of salt.
  3. Reduce heat to low. Add the white chocolate chips and let sit for 30 seconds without stirring. Then whisk slowly in a circular motion until completely melted and smooth, about 2 to 3 minutes.
  4. Sprinkle in 1 teaspoon of beet powder and whisk vigorously until fully incorporated. Add more beet powder (up to 1/2 teaspoon more) for a deeper pink color, whisking for about 30 seconds to avoid clumps.
  5. Continue heating on low for another 2 to 3 minutes, whisking occasionally, until hot but not boiling (around 170°F/77°C). Remove from heat if it starts to simmer.
  6. While the hot chocolate heats, prepare marshmallow hearts: use a small heart-shaped cookie cutter to cut large marshmallows into hearts, or cut mini marshmallows into hearts with a sharp knife.
  7. Pour the hot chocolate into mugs, filling about three-quarters full. Float 3 to 4 marshmallow hearts on top of each mug.
  8. Optional: garnish with a sprinkle of pink sanding sugar, edible glitter, or grated white chocolate. Serve immediately.

Notes

Use high-quality white chocolate for the smoothest melt. Avoid white melting wafers. For a dairy-free version, use full-fat oat milk and coconut cream. Beet powder can be substituted with a drop of natural red food coloring. To prevent marshmallow hearts from sinking, add them just before serving.
