  • 1 ¾ cups (220g) all-purpose flour (can substitute half with whole wheat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 cup (240ml) canned pumpkin puree (not pumpkin pie filling)
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • ⅓ cup (80ml) vegetable oil or melted coconut oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk (dairy or plant-based)
  • For the Cream Cheese Swirl:
  • 4 ounces (115g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt until evenly combined.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, oil, eggs, vanilla extract, and milk. Whisk until smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
  5. In a small bowl, beat together the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
  6. Spoon about 2 tablespoons of pumpkin batter into each muffin cup. Dollop about 1 tablespoon of cream cheese mixture on top of each.
  7. Use a toothpick or skewer to gently swirl the cream cheese into the pumpkin batter to create a marbled effect.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the pumpkin part comes out mostly clean.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

Use room temperature eggs and cream cheese for smooth mixing. Do not overmix the batter to keep muffins tender. Check muffins a few minutes before the timer ends to avoid overbaking. Muffins freeze well individually wrapped for up to 3 months. Adding a splash more milk can adjust batter thickness if needed.
