  • 2 ½ cups (312 g) all-purpose flour
  • 1 cup (227 g) unsalted butter, cold and cubed
  • 2 tbsp granulated sugar
  • ½ tsp salt
  • 57 tbsp ice water, chilled
  • 3 medium Granny Smith apples, peeled, cored, and finely chopped (about 2 cups)
  • ⅓ cup (67 g) brown sugar
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg (optional)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • ½ cup (60 g) powdered sugar
  • 2 tbsp milk (whole or dairy-free)
  • ½ tsp ground cinnamon
  • ¼ tsp vanilla extract

Instructions

  1. Make the Pie Dough: In a large bowl, combine flour, sugar, and salt. Add cold, cubed butter and use a pastry cutter or fingers to work butter into flour until mixture resembles coarse crumbs. Slowly add ice water, one tablespoon at a time, mixing gently until dough just comes together. Wrap dough in plastic wrap and chill for at least 30 minutes.
  2. Prepare the Apple Filling: Peel, core, and finely chop apples. In a medium bowl, mix apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir well to coat evenly. Set aside.
  3. Roll and Cut the Dough: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out chilled dough to about ⅛ inch (3 mm) thickness. Use larger star cookie cutter to cut out 12 bases and place on parchment-lined baking sheet. Re-roll scraps as needed.
  4. Assemble the Mini Pies: Spoon about 1 tablespoon of apple filling onto each star base, leaving a small border. Roll out remaining dough and use smaller star cutter to cut out 12 tops. Place small star on top of each pie, pressing edges to seal. Crimp edges with fork or fingers. Brush tops lightly with water or beaten egg if desired.
  5. Bake: Bake pies for 20-25 minutes until golden and bubbly.
  6. Make the Cinnamon Glaze: While pies bake, whisk powdered sugar, milk, cinnamon, and vanilla extract in a small bowl until smooth and pourable.
  7. Glaze and Serve: After pies cool about 10 minutes, drizzle cinnamon glaze over each mini pie. Let glaze set for a few minutes before serving warm or at room temperature.

Notes

Keep ingredients cold for flaky crust. Don’t overfill pies to prevent leaking. Use fine apple chops for even cooking. Brush edges with water or egg wash to seal better. Adjust glaze consistency by adding milk or powdered sugar as needed. Dough can be chilled between steps if kitchen is warm.
