Creamy Champurrado: Best Mexican Hot Chocolate Recipe

This creamy champurrado is a traditional Mexican hot chocolate thickened with masa harina, sweetened with piloncillo, and spiced with cinnamon. It’s rich, velvety, and perfect for cozy mornings or holiday celebrations.

Ingredients

Scale
  • 4 cups whole milk (or oat milk for dairy-free)
  • 1/2 cup masa harina (preferably Maseca)
  • 1/2 cup piloncillo, chopped (or dark brown sugar)
  • 2 ounces Mexican chocolate, chopped (Ibarra or Abuelita)
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (pure)
  • 1/4 teaspoon ground ancho chili powder (optional)
  • 1 tablespoon unsalted butter (optional)
  • Whipped cream or marshmallows (optional)

Instructions

  1. In a small bowl, whisk together the masa harina and 1 cup of cold milk until completely smooth. No lumps allowed. Set aside.
  2. Pour the remaining 3 cups of milk into a medium saucepan. Add the chopped piloncillo, cinnamon stick, and salt. Place over medium heat and stir occasionally until the piloncillo dissolves completely, about 3 to 4 minutes. The milk should be steaming but not boiling.
  3. Reduce the heat to low. Slowly pour the dissolved masa harina into the warm milk while whisking constantly. Keep whisking for about 1 minute to prevent lumps.
  4. Continue cooking over low heat, stirring frequently with a wooden spoon, for 8 to 10 minutes. The mixture will thicken noticeably and should coat the back of a spoon. The raw corn smell will transform into a sweet, toasty aroma.
  5. Add the chopped Mexican chocolate and stir until fully melted and incorporated, about 2 minutes. The color will deepen to a rich, warm brown.
  6. Remove the saucepan from heat. Stir in the vanilla extract and, if using, the butter and optional chili powder. Remove the cinnamon stick. Taste and adjust sweetness if needed.
  7. Serve immediately in warm mugs. The champurrado will continue to thicken as it cools. If it gets too thick, stir in a splash of warm milk.

Notes

Dissolve masa harina in cold liquid first to prevent lumps. Simmer gently on low heat to avoid scorching. For a thinner drink, use 1/3 cup masa harina; for thicker, use 2/3 cup. Champurrado tastes even better the next day. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop with a splash of milk.
