  • 1 pound smoked sausage, sliced into rounds
  • 2 pounds potatoes (Yukon Gold or Russet), peeled and diced into 1-inch cubes
  • 4 cups kale, stems removed and leaves chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil
  • Optional garnishes: crumbled bacon, shredded Parmesan cheese, or a drizzle of olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until browned and crispy. Remove with a slotted spoon and set aside.
  2. In the same skillet, add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Place the diced potatoes at the bottom of a 6-quart or larger slow cooker. Top with the sautéed onions and garlic, then add the browned sausage. Sprinkle with dried thyme, smoked paprika, salt, and pepper.
  4. Pour the chicken broth over the ingredients and stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender and the broth has thickened slightly.
  6. About 30 minutes before serving, stir in the chopped kale and heavy cream. Let cook for the remaining time until the kale is wilted and tender.
  7. Taste and adjust seasoning with additional salt and pepper if needed. If the soup is too thick, add a splash of broth or water; if too thin, cook uncovered for 15-20 minutes.
  8. Ladle into bowls and garnish with desired toppings. Serve hot.

Notes

For best flavor, brown the sausage before adding to the crockpot. Add kale at the end to keep it tender. For a dairy-free version, substitute heavy cream with full-fat coconut milk. Leftovers can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
