A refreshing and creamy frozen treat inspired by the classic mango lassi, sweetened with cardamom-infused honey for a cozy, spicy twist. Perfect for hot summer days and easy to make with simple ingredients.

  • 2 large ripe mangoes (peeled and chopped) or 3 medium
  • 1 cup (240 ml) plain Greek yogurt (full-fat preferred, or low-fat/dairy-free coconut yogurt)
  • 1/4 cup (85 g) honey (raw wildflower honey recommended)
  • 1 tsp ground cardamom
  • 1 tbsp fresh lime juice
  • 1/4 cup (60 ml) cold water
  • Pinch of salt
  • Optional: mint leaves (for garnish or blending)
  • Optional: 2-3 crushed cardamom pods (for infusing honey)

Instructions

  1. Prepare the cardamom honey: Gently warm 1/4 cup (85 g) honey in a small saucepan over low heat. Add 2-3 crushed cardamom pods and let infuse for 10 minutes off the heat. Strain out pods and let honey cool. If using pre-ground cardamom, mix it directly into the honey.
  2. Blend the mango: Place peeled and chopped mangoes in a blender. Add Greek yogurt, fresh lime juice, pinch of salt, and cold water. Blend until smooth and creamy, about 45 seconds to 1 minute. Add more water if too thick.
  3. Sweeten the base: Add 3 tablespoons of cardamom honey to the blender and pulse a few times to mix. Taste and adjust sweetness by adding more honey gradually.
  4. Assemble the popsicles: Pour a few tablespoons of mango lassi mixture into each popsicle mold. Drizzle a small spoonful of cardamom honey on top. Use a skewer or toothpick to gently swirl the honey into the mixture, creating marbled pockets.
  5. Freeze: Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
  6. Unmold and enjoy: Run warm water over the outside of molds for 10-15 seconds to loosen. Gently pull sticks out and serve immediately.

Notes

Use full-fat Greek yogurt for creamier texture; low-fat or dairy-free yogurts freeze icier. Swirling cardamom honey instead of mixing it fully creates flavorful pockets. Warm honey gently to preserve floral notes. Freeze popsicles overnight for best texture. Run warm water on molds to unmold easily. Adjust sweetness and creaminess by adding more honey or yogurt if needed.
