A creamy, protein-packed overnight oats recipe made with cottage cheese and peanut butter. Ready in 5 minutes the night before, it’s the perfect make-ahead breakfast for busy mornings.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (dairy or plant-based)
  • 1/3 cup (80g) small-curd cottage cheese
  • 2 tablespoons (32g) natural peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, berries, extra peanut butter drizzle

Instructions

  1. Blend the cottage cheese (optional but recommended). Add cottage cheese to a small blender or use an immersion blender in your jar. Blend until completely smooth, about 15-20 seconds. If skipping, stir in as-is.
  2. Combine the wet ingredients. In your jar or container, add milk, blended cottage cheese, peanut butter, honey or maple syrup, and vanilla extract. Stir well until peanut butter is fully incorporated.
  3. Add the dry ingredients. Pour in rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir until oats are fully coated and no dry pockets remain.
  4. Seal and refrigerate. Put the lid on and refrigerate for at least 4 hours, but overnight (8-12 hours) is best.
  5. Give it a stir before serving. In the morning, stir well. If too thick, add a splash of milk to loosen.
  6. Add toppings and enjoy. Add desired toppings and eat cold or microwave for 30-45 seconds if preferred warm.

Notes

For best texture, use rolled oats (not instant or steel-cut). The mixture should look slightly soupy before refrigerating. Flavors improve after a day or two in the fridge. Store in an airtight container for up to 5 days. Do not freeze. For vegan version, use plant-based milk, silken tofu or dairy-free yogurt instead of cottage cheese, and maple syrup instead of honey.
