  • 2 tablespoons (32g) creamy peanut butter (natural preferred)
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: Peel the ripe banana and add it to your jar or container. Use a fork to mash until mostly smooth with a few small chunks.
  2. Add the peanut butter and maple syrup: Spoon in 2 tablespoons of creamy peanut butter and 1 tablespoon of maple syrup. If the peanut butter is cold, microwave for about 10 seconds to soften.
  3. Pour in the milk and vanilla: Add 1/2 cup of milk and 1/2 teaspoon of vanilla extract.
  4. Add the oats, chia seeds, and salt: Measure out 1/2 cup of rolled oats, 1 tablespoon of chia seeds, and a tiny pinch of salt. Dump them on top of the liquid ingredients.
  5. Stir everything together: Use a fork or small whisk to mix thoroughly for 30 to 45 seconds, ensuring no dry pockets remain.
  6. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, preferably overnight (8 to 12 hours).
  7. Add toppings and enjoy: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chopped peanuts, or cinnamon. Eat cold or microwave for 30 to 45 seconds if desired.

Notes

Use rolled oats, not instant or steel-cut. Don’t skip the stirring step to avoid clumps. For meal prep, make up to 4-5 jars at once; they keep in the fridge for up to 5 days. Add fresh banana slices only when ready to eat to prevent browning. The flavors improve on day 2 or 3.
