  • 1 cup (90g) rolled oats
  • 1 large ripe banana, mashed (about 1/2 cup or 120g)
  • 1/4 cup (64g) creamy peanut butter
  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 12 tablespoons (15-30ml) maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a small mixing bowl until smooth and almost liquidy.
  2. Add the peanut butter, milk, Greek yogurt, maple syrup (if using), and vanilla extract to the mashed banana. Whisk or stir until fully combined and smooth.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir until all oats are coated and submerged.
  4. Transfer the mixture to a mason jar or airtight container. Stir once more.
  5. Cover and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. The next morning, stir the oats. If too thick, add a splash of milk to loosen.
  7. Top with sliced banana, extra peanut butter, granola, or other desired toppings. Serve cold or warm in the microwave for 30-45 seconds.

Notes

For best texture, use rolled oats (not instant or steel-cut). The riper the banana, the sweeter the oats. If using thin milk like unsweetened almond, the oats may be less creamy; add extra chia seeds or yogurt to thicken. Flavors deepen after 2-3 days. Store in the refrigerator for up to 4 days or freeze for up to 3 months.
