  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup full-fat sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 12 ounces egg noodles, cooked al dente

Instructions

  1. Trim excess fat from the chuck roast and cut into 1-inch cubes. Pat dry with paper towels.
  2. Heat 2 tablespoons butter in a large skillet over medium heat. Add chopped onions and cook until translucent, about 3 minutes.
  3. Add sliced mushrooms and cook until they release moisture and start to brown, about 5 minutes.
  4. Add minced garlic and cook for 1 more minute. Season lightly with salt and pepper.
  5. Optional: In the same skillet, add a little oil and brown the beef cubes in batches for 6-8 minutes to develop flavor.
  6. Transfer beef, sautéed mushrooms and onions, beef broth, Dijon mustard, Worcestershire sauce, salt, and pepper into the slow cooker. Stir gently to combine.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is tender and easily shredded with a fork.
  8. About 30 minutes before serving, whisk the flour with a few tablespoons of cold water to make a slurry. Stir the slurry into the slow cooker to thicken the sauce.
  9. Just before serving, stir in the sour cream carefully. Avoid boiling after this point to prevent curdling. Taste and adjust seasoning.
  10. Cook egg noodles according to package directions until al dente. Drain well.
  11. Serve the creamy beef stroganoff over the egg noodles. Garnish with chopped fresh parsley if desired.

Notes

Add sour cream at the end off heat to prevent curdling. Browning the beef is optional but recommended for extra flavor. For gluten-free, substitute flour with cornstarch and use gluten-free noodles. For dairy-free, use coconut cream instead of sour cream. Avoid stirring vigorously after adding sour cream to keep sauce silky smooth. Let sauce thicken uncovered if too thin after adding sour cream.
