  • 10 ounces fresh baby spinach or frozen chopped spinach, thawed and drained
  • 1 (14-ounce) can quartered artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • About 3 cups tortilla chips (store-bought or homemade, lightly salted)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh spinach, heat a skillet over medium heat and sauté the spinach until wilted, about 2-3 minutes. Let it cool slightly, then squeeze out excess moisture using a clean kitchen towel or paper towels. If using frozen, make sure it’s fully thawed and drained.
  3. Drain the can of artichoke hearts thoroughly, then chop into bite-sized pieces.
  4. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a spatula to blend until smooth and creamy.
  5. Stir in the shredded mozzarella and grated parmesan cheese.
  6. Add minced garlic, lemon juice, salt, and pepper. Mix thoroughly to blend all flavors.
  7. Gently fold in the prepared spinach and chopped artichokes, ensuring they’re evenly distributed but not mashed.
  8. Spoon the dip into your prepared baking dish, smoothing the top with a spatula.
  9. Place in the oven and bake for 20-25 minutes until the top is bubbly and lightly browned.
  10. Let the dip cool for about 5 minutes before serving.

Notes

If the dip seems too thick, add a splash of milk or cream before baking to loosen it up. Keep garlic minced finely to avoid overpowering bites. If the dip browns too fast on top, loosely cover with foil halfway through baking. For crispy tortilla chips, bake corn tortillas at 350°F for 10-12 minutes, flipping halfway.
