These creamy, fruity popsicles combine tangy strawberry and lemon flavors with a beautiful blueberry swirl for a refreshing summer treat that’s quick and easy to make.

  • 1 cup plain Greek yogurt
  • 1/2 cup heavy cream or full-fat coconut milk
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or frozen strawberries, hulled and chopped
  • 2 tablespoons fresh lemon juice (about half a lemon)
  • 1 teaspoon lemon zest (optional)
  • 1/2 cup fresh or frozen blueberries
  • 1 teaspoon sugar or honey (optional)

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine blueberries and sugar or honey. Cook over medium heat for 5-7 minutes until berries soften and release juice. Mash slightly with a fork or spoon, then let cool to room temperature. Optionally strain through a fine mesh to remove seeds.
  2. Make the Strawberry Lemon Puree: In a blender, combine strawberries, lemon juice, and lemon zest. Blend until smooth but still slightly textured. Set aside.
  3. Mix the Creamy Base: In a bowl, whisk together Greek yogurt, heavy cream, honey, and vanilla extract until smooth and slightly airy.
  4. Combine Strawberry Layer: Gently fold the strawberry lemon puree into half of the creamy base mixture to create a bright pink fruity layer.
  5. Assemble the Popsicles: Spoon a layer of the creamy base into each mold, followed by a spoonful of strawberry lemon cream, then add a small dollop of blueberry swirl on top. Use a skewer or toothpick to gently swirl the blueberry through the layers. Repeat layering until molds are full, leaving a little room at the top.
  6. Insert sticks and freeze: Place popsicle sticks into molds and freeze for at least 6 hours or overnight. If sticks don’t stand upright, freeze halfway, then insert sticks and finish freezing.
  7. Unmold and enjoy: Run warm water over the outside of molds for 10-15 seconds to release popsicles. Serve immediately or store in a freezer-safe bag.

Notes

If blueberry swirl is too thick, stir in a splash of water or lemon juice. Avoid overblending strawberry puree to keep texture. Use Greek yogurt and heavy cream for creamy texture; coconut yogurt and cream for dairy-free. Freeze at least 6 hours for best texture. If no popsicle molds, use small paper cups or silicone muffin liners with sticks.
