  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each), pounded to even thickness
  • 1/3 cup sun-dried tomatoes packed in oil (about 50 g), chopped
  • 3 cups fresh spinach (about 90 g), roughly chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), preferably low sodium
  • 1/3 cup freshly grated Parmesan cheese (30 g)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • Optional: red pepper flakes for a subtle kick
  • Optional: fresh basil for garnish

Instructions

  1. Place each chicken breast between two pieces of plastic wrap and gently pound with a meat mallet or rolling pin until about 1/2 inch (1.3 cm) thick. (5 minutes)
  2. Season both sides of the chicken with salt, pepper, and half of the Italian seasoning. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and sear for 4-5 minutes per side until golden brown but not fully cooked. Remove from pan and set aside. (10 minutes)
  3. Reduce heat to medium. Add 1 tablespoon butter to the same pan. Once melted, add minced garlic and cook for about 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes. (3 minutes)
  4. Pour in 1/2 cup chicken broth and 1 cup heavy cream. Stir in remaining Italian seasoning. Bring to a gentle simmer, scraping browned bits from the pan. Add chopped spinach and cook until wilted, about 2-3 minutes. (5 minutes)
  5. Stir in 1/3 cup freshly grated Parmesan cheese until melted and silky. Taste and adjust seasoning with salt, pepper, and red pepper flakes if using. Add a splash of broth if sauce is too thick. (3 minutes)
  6. Return chicken breasts to the pan, nestling them into the sauce. Cover and simmer gently for 5 minutes or until chicken reaches 165°F (74°C). (5 minutes)
  7. Remove from heat and let chicken rest in the sauce for 1-2 minutes before serving. (2 minutes)

Notes

Pound chicken breasts evenly for uniform cooking. Use freshly grated Parmesan for best sauce texture. Simmer sauce gently to avoid curdling. Adjust seasoning gradually due to saltiness from Parmesan and sun-dried tomatoes. Leftovers reheat well on stovetop with added broth or cream if sauce thickens. Can substitute chicken thighs or use half-and-half for lighter sauce.
