Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, chopped
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon salt
  • Pinch of black pepper

Instructions

  1. Pat the pork chops completely dry with paper towels.
  2. In a small bowl, mix garlic powder, smoked paprika, onion powder, salt, black pepper, and cayenne (if using). Spread a thin layer of mayonnaise over both sides of each pork chop, then sprinkle the seasoning mixture evenly over both sides, patting gently to adhere.
  3. Preheat air fryer to 400°F (200°C) for 3 minutes.
  4. Place pork chops in a single layer in the air fryer basket, leaving space between them. Cook at 400°F for 8 minutes.
  5. Flip the pork chops and cook for another 4-6 minutes, until internal temperature reaches 145°F (63°C) in the thickest part.
  6. While pork chops cook, combine softened butter, minced garlic, parsley, chives, lemon juice, salt, and pepper in a small bowl. Mash with a fork until well combined. Set aside at room temperature.
  7. Let pork chops rest for 5 minutes on a cutting board.
  8. Spoon a generous dollop of garlic herb butter onto each hot pork chop and serve immediately.

Notes

Don’t skip the mayonnaise—it creates an incredibly crispy crust. Let pork chops sit at room temperature for 15 minutes before seasoning for even cooking. Use a meat thermometer for best results; cook to 145°F. Rest chops for 5 minutes before serving to retain juices.
