A quick and easy summer side dish featuring fresh asparagus spears coated in garlic, olive oil, and Parmesan cheese, grilled to crispy perfection with a flavorful crust.

  • 1 pound fresh asparagus spears, washed and trimmed
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese (about 50 grams)
  • ½ teaspoon salt (kosher or sea salt)
  • ¼ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Trim about 1 inch off the woody ends of the asparagus. Rinse and pat dry thoroughly.
  2. In a medium bowl, combine olive oil, minced garlic, salt, black pepper, and red pepper flakes if using. Stir well.
  3. Add asparagus spears to the bowl and toss until evenly coated with the garlic oil mixture.
  4. Sprinkle grated Parmesan cheese over the asparagus and gently toss again to coat.
  5. Preheat grill or grill pan over medium-high heat (about 400°F). If using charcoal, wait until coals are covered with white ash.
  6. Place asparagus spears perpendicular to grill grates and cook for 4-6 minutes, turning every 2 minutes, until tender and Parmesan is golden and crispy.
  7. Remove from grill and immediately sprinkle with lemon zest.
  8. Transfer to a platter and serve warm. Optionally, add extra Parmesan or fresh herbs on top.

Notes

Dry asparagus thoroughly before coating to help Parmesan stick. Use freshly grated Parmesan for best crispiness. Avoid overcrowding the grill to ensure even cooking. Use tongs to turn asparagus to prevent breaking. For dairy-free, substitute Parmesan with nutritional yeast or vegan cheese alternative.
