  • 3 medium Yukon Gold potatoes, peeled and diced (about 1/2-inch cubes)
  • 8 ounces breakfast sausage (spicy pork sausage recommended)
  • 4 large eggs, preferably at room temperature
  • 1 small yellow onion, finely chopped
  • 1 small red bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter
  • Salt and freshly cracked black pepper, to taste
  • A handful of chopped parsley or chives for garnish
  • 1/2 cup shredded cheddar or pepper jack cheese (optional)

Instructions

  1. Wash, peel, and dice the Yukon Gold potatoes into 1/2-inch cubes. Chop the onion, bell pepper, and mince the garlic.
  2. Parboil the diced potatoes in salted water for about 5 minutes until just fork-tender. Drain and pat dry.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausage, breaking it apart as it cooks until browned and cooked through. Remove and set aside.
  4. In the same skillet, add butter and remaining olive oil. Sauté onions and bell peppers until softened and caramelized, about 5 minutes. Add garlic and cook for 30 seconds more.
  5. Add the parboiled potatoes to the skillet, spreading evenly. Leave undisturbed for several minutes to develop a golden crust, then gently flip and cook until all sides are crispy and browned, about 15 minutes total.
  6. Return the cooked sausage to the skillet and fold into the potatoes and veggies. Season with salt and pepper and stir to combine.
  7. Make four small wells in the skillet mixture and crack the eggs into each. Cover the skillet with a lid or foil and cook on low heat until egg whites are set but yolks remain runny, about 6-8 minutes.
  8. If using cheese, sprinkle it over the eggs during the last minute of cooking and cover to melt.
  9. Garnish with chopped parsley or chives and serve hot straight from the skillet.

Notes

Parboiling potatoes is optional but recommended for faster cooking and crispier texture. Avoid overcrowding the pan to ensure crispiness. Use room temperature eggs for even cooking. Cover skillet to steam eggs gently without drying out.
