Ingredients

Scale
  • 1 pound ground turkey (93% lean)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon dried oregano
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 can (10 oz) diced tomatoes with green chilies
  • ¼ cup low-sodium chicken broth
  • 1 cup shredded Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat the oil: Place your large skillet over medium-high heat and add the olive oil. Let it heat up for about 30 seconds until it shimmers.
  2. Cook the aromatics: Add the diced onion to the skillet and cook for 2-3 minutes, stirring occasionally, until it becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Brown the turkey: Add the ground turkey to the skillet. Break it up with your wooden spoon into small crumbles. Cook for 5-6 minutes, stirring occasionally, until the turkey is no longer pink.
  4. Season the meat: Sprinkle the chili powder, cumin, smoked paprika, cayenne (if using), oregano, salt, and pepper over the cooked turkey. Stir everything together until the spices coat the meat evenly. Cook for 1 minute to toast the spices.
  5. Add the veggies and beans: Pour in the diced tomatoes with green chilies, drained black beans, and frozen corn. Add the chicken broth. Stir everything together until well combined. Bring the mixture to a gentle simmer.
  6. Simmer: Reduce the heat to medium-low and let the skillet simmer for 5 minutes, stirring occasionally, until slightly thickened.
  7. Melt the cheese: Sprinkle the shredded cheese evenly over the top of the skillet. Cover with a lid and cook for 2-3 minutes until the cheese is fully melted and bubbly.
  8. Garnish and serve: Remove the skillet from heat. Sprinkle fresh chopped cilantro on top and serve with lime wedges on the side.

Notes

For best results, use 93% lean ground turkey to keep the meat moist. Toast the spices for 1 minute after adding to deepen flavor. If the mixture looks dry during simmering, add an extra splash of chicken broth. If too soupy, simmer uncovered for a minute or two. Let the cheese rest for a minute after melting to prevent it from sliding off. Season with salt after browning the meat to avoid drawing out moisture.
