A quick and easy weeknight dinner made with ground beef, mushrooms, and a creamy sour cream sauce, all in one skillet and ready in under 30 minutes.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 preferred)
  • 8 ounces (225g) cremini mushrooms, sliced
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons (16g) all-purpose flour
  • 1½ cups (360ml) low-sodium beef broth
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • ¾ cup (180g) full-fat sour cream, room temperature
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 8 ounces (225g) wide egg noodles
  • Water for boiling and salt

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain and set aside. Reserve about ½ cup of pasta water.
  2. While the noodles cook, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned and no longer pink (about 5-6 minutes). Leave about 1 tablespoon of fat in the pan. Transfer beef to a plate.
  3. Reduce heat to medium. Add butter to the same skillet. Once melted, add onion and mushrooms. Cook, stirring occasionally, until mushrooms release liquid and start to brown (about 5-7 minutes).
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the mushroom mixture. Stir and cook for 1 minute.
  6. Slowly pour in beef broth while stirring constantly. Add Worcestershire sauce, Dijon mustard, and smoked paprika. Bring to a gentle simmer and cook for 3-4 minutes until sauce thickens. Scrape up browned bits from the pan.
  7. Return cooked beef to the skillet. Stir and heat through for 1 minute. Season with salt and pepper.
  8. Remove skillet from heat. Let sit for 30 seconds, then stir in sour cream until fully incorporated.
  9. Add drained noodles to the skillet and toss gently to coat. If too thick, add a splash of reserved pasta water.
  10. Sprinkle with fresh parsley and serve immediately.

Notes

Don’t skip browning the beef properly for maximum flavor. Let mushrooms brown without moving them too much. Always use room temperature sour cream and remove pan from heat before adding to prevent curdling. Taste as you go and season each step. Multitask by starting pasta water first, then cooking beef while water heats.
