This easy 5-ingredient crockpot tailgate queso dip is creamy, cheesy, and perfect for game day. Made with Velveeta, Rotel, cream cheese, milk, and chili powder, it’s a set-it-and-forget-it recipe that stays warm for hours.

  • 1 block (16 ounces) Velveeta cheese, cubed
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 block (8 ounces) cream cheese, softened and cubed
  • 1 cup whole milk
  • 1 teaspoon chili powder

Instructions

  1. Prep your ingredients: cube the Velveeta and cream cheese into 1-inch pieces. Open the can of Rotel and stir to mix. Measure out milk and chili powder.
  2. Layer everything in the crockpot: add cubed Velveeta, then cream cheese cubes. Pour undrained Rotel over cheeses, add milk, and sprinkle chili powder on top. Do not stir.
  3. Cook on low for 1 hour. Do not lift the lid to peek.
  4. After 1 hour, remove lid and stir vigorously until smooth. If too thick, add a splash more milk. If too thin, cook uncovered for 15 more minutes.
  5. Taste and adjust seasoning if needed (more chili powder, salt, or hot sauce).
  6. Switch crockpot to warm setting or keep on low. Stir every 30 minutes to maintain texture. Serve warm.

Notes

For best results, use low heat and avoid peeking. Cube cheese evenly for even melting. Cream cheese adds richness and body. If queso separates, stir in a tablespoon of milk. Can be made ahead and reheated.
