A quick and easy 5-ingredient ground beef taco soup that comes together in under 30 minutes. Perfect for busy weeknights, this hearty soup is made with simple pantry staples and delivers rich, savory flavor.

Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning (e.g., McCormick or homemade)
  • 1 can (15 oz) diced tomatoes with green chiles (e.g., Rotel)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 2 cups beef broth or water (adjust to desired consistency)

Instructions

  1. Brown the ground beef: Place a large pot over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and no longer pink. Drain excess fat, leaving about 1 tablespoon in the pot.
  2. Add the taco seasoning: Sprinkle the entire packet of taco seasoning over the browned beef. Stir and cook for 1 minute until fragrant.
  3. Add the canned ingredients: Pour in the undrained diced tomatoes with green chiles, drained black beans, and drained corn. Stir to combine.
  4. Add the liquid: Pour in 2 cups of beef broth or water. Stir again. For a thicker soup, use less liquid; for a brothier soup, add more.
  5. Simmer: Bring the soup to a gentle boil, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally, until slightly thickened.
  6. Serve: Ladle into bowls and top with desired toppings such as shredded cheese, sour cream, crushed tortilla chips, diced avocado, or fresh cilantro.

Notes

For best flavor, don’t skip browning the beef properly and blooming the taco seasoning. The soup tastes even better the next day. Adjust liquid to your preferred consistency. For a thicker soup, let it simmer longer or mash some beans against the pot.
