  • 2 cups mixed vegetables (frozen or fresh)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, minced

Instructions

  1. Mince 3 cloves of garlic. If using fresh veggies, chop them into bite-sized pieces. Measure out 3 tablespoons soy sauce and 1 tablespoon sesame oil. Open the ramen packages and discard the seasoning packets.
  2. Place your skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil and let it heat until it shimmers.
  3. Toss in the minced garlic and stir constantly for about 30 seconds until fragrant but not brown.
  4. Add 2 cups of mixed vegetables to the pan. Stir-fry for 3-4 minutes until tender-crisp.
  5. Break the ramen blocks into pieces (or leave them whole for longer noodles). Add them to the pan along with 1/4 cup of water and the 3 tablespoons of soy sauce. Stir everything together, then cover the pan with a lid. Let it cook for 3-4 minutes, stirring once halfway through.
  6. Remove the lid and give everything a final toss. Taste and adjust seasoning—add a pinch of red pepper flakes for heat or a drizzle of honey for sweetness. Serve immediately, garnished with sesame seeds or green onions if desired.

For best texture, cook noodles directly in the sauce instead of boiling separately. Adjust sauce to taste—add extra soy sauce for saltiness or a teaspoon of brown sugar for sweetness. If using a non-stick pan, avoid metal utensils to prevent scratching.
