  • 1/2 cup (113 g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150 g) granulated sugar, plus extra for cinnamon sugar coating
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping: 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon
  • Optional: 1/2 cup chopped nuts or 1/2 cup peeled, finely diced apple chunks

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a small saucepan over medium heat. Simmer gently for 10-15 minutes until reduced by half and syrupy. Set aside to cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, whisk melted butter, sugar, and eggs until smooth and slightly fluffy. Stir in vanilla extract and cooled apple cider syrup.
  5. Gradually fold dry ingredients into wet mixture until just combined. If batter seems dry, add 1 tablespoon milk.
  6. Spoon batter evenly into muffin cups, filling about three-quarters full.
  7. Bake for 18-22 minutes until a toothpick inserted comes out clean or with a few moist crumbs. Tops should be golden and springy.
  8. Cool muffins in the tin for 5 minutes. Roll warm muffins in cinnamon sugar mixture until coated. Transfer to a cooling rack to finish cooling.
