This easy candy corn popcorn bark is a quick, crowd-pleasing snack made with popcorn, candy corn, and white chocolate. It’s perfect for Halloween parties, fall gatherings, and any occasion where you want an impressive treat in under 15 minutes.

Ingredients

Scale
  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 1/2 cups candy corn
  • 1/2 cup roasted salted peanuts (optional)
  • 12 ounces white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable shortening
  • 1/4 teaspoon vanilla extract (optional)
  • 1/4 cup candy corn (for topping)
  • 2 tablespoons festive sprinkles (optional)
  • Flaky sea salt (optional)

Instructions

  1. Prepare your popcorn (5 minutes). Pop your popcorn using your preferred method. Remove any unpopped kernels. Spread the popped popcorn on a sheet pan to cool completely.
  2. Line your sheet pan (1 minute). Line a large sheet pan with parchment paper or a silicone baking mat.
  3. Combine dry ingredients (2 minutes). In a large mixing bowl, combine the cooled popcorn, 1 1/2 cups of candy corn, and the peanuts if using. Toss gently to distribute evenly.
  4. Melt the white chocolate (2-3 minutes). Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until mostly melted. Stir until completely smooth.
  5. Combine chocolate and popcorn (2 minutes). Pour the melted white chocolate over the popcorn mixture. Fold gently with a rubber spatula until everything is mostly coated.
  6. Spread onto the sheet pan (2 minutes). Transfer the coated mixture to the prepared sheet pan. Spread into an even layer, about 1/2 to 3/4 inch thick. Do not press down too hard.
  7. Add the toppings (2 minutes). While the chocolate is still wet, sprinkle the reserved 1/4 cup of candy corn, festive sprinkles, and flaky sea salt over the top. Press toppings gently into the chocolate.
  8. Set the chocolate (30 minutes). Refrigerate the sheet pan for at least 30 minutes, or until the chocolate is completely firm.
  9. Break into pieces (2 minutes). Once set, remove the parchment paper from the pan. Break the bark into irregular pieces with your hands.

Notes

Make sure popcorn is completely cool before adding chocolate to prevent sogginess. If chocolate thickens before spreading, microwave for 10 seconds. Do not refrigerate after setting to maintain crunch. Store in an airtight container at room temperature for up to 5 days. Can be frozen for up to 2 months.
