These elegant champagne jello shots are festive, easy to make, and taste sophisticated. Perfect for New Year’s Eve parties, they require only 15 minutes of active prep time and four simple ingredients.

Ingredients

Scale
  • 1 ½ cups champagne or sparkling wine (brut or extra dry)
  • 2 tablespoons unflavored gelatin powder
  • ⅓ cup granulated sugar
  • Food coloring (optional, pink or gold recommended)
  • 24 mini plastic champagne cups (2-ounce size)

Instructions

  1. Bloom the gelatin: Pour ½ cup of cold water into a small bowl. Sprinkle the 2 tablespoons of unflavored gelatin powder evenly over the surface. Let it sit for 5-10 minutes until it becomes thick and spongy.
  2. Heat the champagne mixture: Pour 1 cup of the champagne into a small saucepan. Add the ⅓ cup of sugar. Heat over medium-low heat, stirring occasionally, until the sugar dissolves completely and the mixture is warm but not boiling—about 3-4 minutes.
  3. Dissolve the gelatin: Remove the saucepan from heat. Add the bloomed gelatin to the warm champagne mixture. Whisk gently but thoroughly until the gelatin is completely dissolved, about 2-3 minutes. If using food coloring, add it now and stir until evenly distributed.
  4. Add the remaining champagne: Pour in the remaining ½ cup of champagne. Stir gently to combine. Taste the mixture and adjust sweetness if needed.
  5. Fill the cups: Arrange your mini champagne cups on a baking sheet or tray. Using a pitcher with a spout or a liquid measuring cup, carefully pour the mixture into each cup, filling them almost to the top (leave about ⅛ inch space). Pop any surface bubbles with a toothpick.
  6. Refrigerate until set: Carefully transfer the baking sheet to the refrigerator. Let the jello shots set for at least 4 hours, but overnight is better.
  7. Serve and enjoy: Once set, serve the jello shots right in their plastic cups. To pop them out, gently squeeze the sides of the cup.

Notes

Don’t boil the champagne to preserve flavor and alcohol. Use a gentle hand when whisking to avoid bubbles. Test the set before pouring. Make ahead of time (up to 5 days in fridge). Keep jello shots cold; they soften at room temperature after about 30 minutes. For best results, refrigerate overnight.
