This easy copycat recipe recreates the Starbucks Pumpkin Cream Cold Brew at home with a velvety pumpkin cold foam that’s creamy, lightly sweet, and perfectly spiced. It’s cheaper, faster, and uses simple ingredients for a delicious fall-inspired coffee drink.

  • 2 tablespoons heavy cream
  • 1 ½ tablespoons pumpkin puree

  • Pinch of sea salt

  • 1 tablespoon cinnamon

Instructions

  1. Start with your cold brew. Pour 1 ½ cups of cold brew coffee into your tall glass filled with ice. Leave about 2 inches of space at the top for the foam.
  2. Make the pumpkin mixture. In a small bowl, combine 1 ½ tablespoons pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon pumpkin pie spice, ¼ teaspoon vanilla extract, and a pinch of sea salt. Stir until completely smooth.
  3. Combine with milk. Add ¼ cup whole milk and 2 tablespoons heavy cream to the pumpkin mixture. Stir gently until everything is incorporated.
  4. Froth until fluffy. Using a handheld frother, blend the milk mixture for about 30-45 seconds until thick and pourable like a soft cloud.
  5. Check the consistency. The foam should be thick enough that it slowly drips off your spoon. If too runny, froth for another 10-15 seconds. If too thick, add a splash more milk and gently stir.
  6. Assemble your drink. Using a spoon, gently dollop the pumpkin cold foam over the top of your iced cold brew to create a layered effect.
  7. Finish with a garnish. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam.

Notes

For best results, use cold ingredients and don’t over-froth. The salt helps stabilize the foam. Make the foam right before serving as it deflates after about 10 minutes. If using store-bought cold brew, shake it first. For a dairy-free version, use oat milk and coconut cream.
