These Easy Cranberry Brie Bites are the ultimate holiday appetizer—flaky puff pastry cups filled with creamy brie and sweet-tart cranberry sauce, ready in under 25 minutes. Perfect for impressing guests without stress.

  • 1 sheet puff pastry (about 9x9 inches), thawed but still cold
  • 4 ounces brie cheese, cut into 24 small cubes (about 1/2 inch each)
  • 1/4 cup whole berry cranberry sauce
  • 1 tablespoon finely chopped fresh rosemary (optional)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a 24-cup mini muffin pan with cooking spray.
  2. On a lightly floured surface, unfold the puff pastry and roll to about 1/8 inch thickness. Cut out 24 rounds using a 2-inch cutter. Press each round into a mini muffin cup, gently pressing into the bottom and up the sides.
  3. Place the muffin pan in the refrigerator for 10 minutes to chill the pastry cups.
  4. Remove pan from fridge. Place one cube of brie into each pastry cup. Top each with about 1/2 teaspoon of cranberry sauce.
  5. Sprinkle a tiny pinch of chopped rosemary over each bite (if using). Brush the edges of the pastry with the egg wash.
  6. Bake on the center rack for 12-15 minutes, until pastry is puffed and golden brown and brie is melted and bubbly.
  7. Let cool in the pan for 5 minutes, then gently lift each bite out and transfer to a serving platter. Serve warm.

Notes

Chilling the assembled bites for 10 minutes before baking prevents the pastry from shrinking and the cheese from leaking. For best results, use a firm, slightly underripe brie. If you don’t have a mini muffin pan, use a standard 12-cup muffin pan and cut pastry into larger rounds; bake 15-18 minutes.
